While we don't have a date for the founding of Lexington, you might consider that their post office opened  in 1823.

While the community is gone, the present day location for Lexington is 860 feet [262 m] above sea level.<4>.

From our notes, the earliest published mention we've found for Lexington was in the document titled List of Post Offices from Cameron Blevins and Richard Helbock.<6>

From that list, the Lexington post office opened in 1823.
