While our initial information about Saint Anthony came from various goverment sources (GNIS, FIPS), we also found mention of Saint Anthony in various books and other sources.

Saint Anthony is contained in a comprehensive list of Post Offices that was created by Cameron Blevins and Richard Helbock.<1>
From that list:
The Saint Anthony post office opened in 1902 and had closed by 1991.
