Mitchell County was founded in 1861. Mitchell was created by taking area from Burke, Caldwell, McDowell, Watauga and Yancey Counties.

From the Census Estimates for 2019, <1> Mitchell had a population of 14,928 people. This is a decrease of 4.18% since the last Census (which gave a population of 15,579 people in 2010).

At the time of the 2010 Census, Mitchell represented 0.16% of the total population of North Carolina.
