The community of Zapata is the Seat for Zapata County.

Zapata County was founded January 22, 1858. Zapata was created by taking area from Starr and Counties.

From the Census Estimates for 2009, <1> Zapata had a population of 14,036 people. This is an increase of 15.22% since the last Census (which gave a population of 12,182 people in 2000).

At the time of the 2000 Census, Zapata represented 0.06% of the total population of Texas, making it the state's 156th most populous county (out of 254 counties).
